Course Description
We are planning to continue with a concept from last year with a primary focus on the proper technique of cooking and development of your cooking skills. With these skills you will be able to cook great food that tastes amazing, saves money and, in the long run, will help you lead a happier, healthier life.
A master chef will help students with cooking, starting each morning by introducing three recipes and cooking them in front of the students.
The students will then be divided into smaller groups choosing one the recipes and trying it on their own. Recipes would involve dishes of Czech, Japan, Thai, Italian and other cuisines.
Over the five days of this course we’ll teach you how to cook a wide variety of different styles of food, give you a great repertoire of recipes and techniques to use every day, learning knife skills throughout. At the end of each class you will sit down and try everything you have made as well as recap the recipes with the chef.
We will continue with so called cooking circle that will support development of your cooking skills further. There are 3 circles a day each circle takes twenty minutes and you will rotate them all. This training will involve: distinguishing different kinds meats and learning which meat is suitable for which dish, how to care for knives, identifying flavours, expose the qualities of vegetables, cutting vegetables, prepare the essential sauces and plate everything with exquisite attention to detail, using herbs, baking tricks, butter ghee, eggs cooking, nutrition tips, healthy food, fresh drinks, improvisation when you are missing an ingredient…
Last day the students will prepare their own recipes using all the skills they will have learned during the week (creating own recipe, calculating budget and buying the ingredients) under the leadership of the chef.
Is there a better way to start our mornings than with a breakfast? Mornings we will cook and eat all together. This would involve porridge, pancakes, donuts, vegetable/fruit smoothies and eggs.
Learning Goals
Advanced Cooking Knowledge - 5 days of cooking in a cooking studio
Healthy Cooking and Lifestyle Information
Cooperation and Leadership skills through various games
ISP Mission Links
i) Authentic education - "...learning at ISP is an enjoyable, thought provoking and dynamic process, which allows students to make meaningful and relevant connections. Learners are given the opportunity to experience and apply "real world" knowledge and skills from a variety of disciplines. In other words instead of simply learning about the subject, students have the opportunity to 'do' the discipline as a practitioner would."
ii) Adapt and contribute responsibly to our changing world - "Developing essential skills and competencies enable us to evaluate the shifting circumstances we encounter, take calculated risks and adapt well to change. Our core values guide us to make responsible choices and actively support the needs of our local and global communities."
iii) Work Cooperatively and Independently: Use a variety of interpersonal skills to engage peers in productive collaborative work, while retaining the capacity to create, based on one’s own abilities.
iv) Healthy - "Caring for our physical and emotional well-being enables us to lead balanced lives in work and in play, with the goal of developing a sound mind, body and spirit."
